Breakfast

Chunky Monkey Overnight Oatmeal

Serves: 1

Ingredient notes: Vegetarian, Corn-free, Egg-free, Gluten-free, Peanut-free, Soy-free

Ingredients:

1/3 cup rolled oats

1/3 cup milk

1/2 banana, sliced

1 tbs. sliced almonds

1/3 cup plain yogurt

1 tbs. chia seeds (optional)

2 tbs. coconut flakes

1 tbs. cacao nibs or chocolate chips

Directions:

Mix oats, milk, and chia seeds together in an 8-ounce mason jar or bowl. Place in the refrigerator overnight. In the morning, top with banana, coconut, almonds, and cocoa nibs or chocolate chips.

(You may add mix-ins the night before, but keep in mind whatever you incorporate will be soggy by morning.)

Lunch

Chicken Tortilla Soup

Serves: 6 to 8

Ingredient notes: Egg-free, Gluten-free, Peanut-free, Soy-free, Nut tree-free

Ingredients:

1 small onion, chopped

2 cloves garlic, chopped

1/2 red bell pepper, chopped

1/2 to 1 jalapeño, finely chopped (optional)

4 tbs. oil

1 tbs. dried oregano

1 tbs. ground cumin

1 and 1/2 cups shredded cooked chicken

4 cups chicken stock

1 (14-ounce) can diced tomatoes

1 dried chipotle pepper or a pinch of chipotle powder

broken crisp tortilla chips

1 bunch cilantro, leaves chopped

shredded cheddar cheese for serving (garnish)

1 ripe avocado, peeled and chopped

Directions:

In a soup pot, saute onions, garlic, bell pepper and jalapeño over medium heating oil, until just soft, 7 to 10 minutes. Sprinkle with oregano and cumin. Add chicken and chicken stock, tomatoes and chipotle pepper or powder. Bring to a boil, reduce heat and simmer for 5 to 10 minutes. Sprinkle with tortilla chips on top of each ladle bowl of soup. Serve garnished with fresh cilantro, avocado, shredded cheese and a squeeze of fresh lime juice.

Dinner

Dirty Rice

Serves: 6

Ingredient notes: Gluten-free, Dairy-free, Egg-free, Soy-free

Ingredients:

1 pound ground beef

1 medium onion diced

1 bell pepper diced

1 cup celery dice

1 1/2 rice white uncooked

1/2 ts salt

3 cloves garlic minced

1/2 tbs Cajun seasoning

3 1/2 cups beef stock

Chopped green onion or parsley for garnish

Directions:

Add ground beef to a dutch oven or heavy bottomed pan, set over medium heat. Crumble with wooden spoon and cook 4-6 minutes until no pink remains. Add onion, garlic, green pepper, celery, Cajun seasoning, and salt. Stir until soften, about 10 minutes, Add rice and beef stock. Bring to boil, reduce heat and simmer covered about 20-25 minutes, or until rice is cooked. Allow to sit for 5 to 10 minutes, then fluff with a fork. Garnish with green onion, or parsley before serving.
